Pinot Noir 2012
A big, rich, layered Pinot Noir that offers tight, reserved notes of
blackcurrants, truffle, crushed rocks, forest floor and sassafras, this
beauty hits the palate with full-bodied richness, beautiful acidity and

Bright red cherry color with hints of dark garnet, The nose expresses black fruit, (cassis & blackberry) red fruit with hints of licorice and flowers such as lila and rose petals. The palate is structured with good freshness. Well balanced by integrated tannins.

A very hazy, straw like color.
hoppy with some malts, saison characteristics hiding. herbal. Nice
balanced flavor profile, starts a little sweet and bready. Saison yeast
in the middle, Finishes with a herbal hoppy note.

Roasted malts, a touch of smoke, pepper, some floral hops.
Hints of bittersweet cocoa, nutty, defined malts and balancing hops, earthy.

The beer itself is a festive take on Bière de Garde, a more robust
variant of the farmhouse ale family tree; brewed with sweet cherries,
black currants and plums then aged on lightly toasted American oak.

Crafted from fermented Texas wildflower honey, Mission figs and
turbinado sugar, it is twice distilled in traditional copper pots then
artfully matured in premium oak casks. On the nose you get you get a blend of honey, a light fruit cocktail, mint, tabacco and soft leather, with a little hint of floral. A medium lingering finish with a hint of spice, honey and leather spice fade with a minty evaporation.
