Selected barrels of mixed fermentation Grisette to create a blend with balanced acidity and funk while remaining refreshing and drinkable. 300 lb of Connecticut peaches were processed in August of 2021 and let the beer go through secondary fermentation on the fruit. After many months the beer was bottled. A third fermentation in the bottle allows natural carbonation to build and flavors to meld and mature. After 4 months in the bottle it is finally ready to enjoy. 5.7% ABV.
