What sets the region of Quincy apart from its neighbor, Sancerre, is its solid bed of limestone deep below the surface covered by sandier topsoil. Winemaker Adèle Rouzé takes a sustainable approach to her craft by avoiding use of chemicals and growing the grapes on the estate. The wine has a clean, steel-cut quality with crisp aromas of citrus, fresh herbs, and crushed river stones. Serve with goat cheese, white meat, white fish, and potato-based dishes.
